Instructions

  1. Preheat the oven to 180 degrees Celsius and line baking sheets with parchment paper.
  2. In a medium bowl, combine rolled oats, flour, brewer's yeast, flaxseed meal, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add vanilla extract and eggs to the butter mixture, beating well after each addition.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dark chocolate chips and chopped walnuts.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 5 centimeters apart.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  9. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
