Instructions
- Preheat the oven to 180 degrees Celsius and line baking sheets with parchment paper.
- In a medium bowl, combine rolled oats, flour, brewer's yeast, flaxseed meal, baking soda, and salt.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add vanilla extract and eggs to the butter mixture, beating well after each addition.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the dark chocolate chips and chopped walnuts.
- Drop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 5 centimeters apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
