Coconut rice

Coconut rice is prepared by cooking rice with coconut milk, water, and aromatic spices for a flavorful side dish.

Instructions

  1. In a large pot, heat coconut oil over medium heat and add sliced ginger and bay leaf. Sauté for 2 minutes until fragrant.
  2. Add rinsed jasmine rice to the pot and stir well to coat the rice with the oil and spices.
  3. Pour in coconut milk and water, then add salt and sugar. Stir to combine all ingredients.
  4. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
  5. Simmer the rice for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
  6. Remove the pot from heat and let it sit, covered, for 5 minutes to allow the rice to steam.
  7. Fluff the rice with a fork, remove the bay leaf, and garnish with chopped green onions before serving.

Prep

  • Rinse jasmine rice under cold water until the water runs clear.
