Coconut rice
Coconut rice is prepared by cooking rice with coconut milk, water, and aromatic spices for a flavorful side dish.

Instructions
- In a large pot, heat coconut oil over medium heat and add sliced ginger and bay leaf. Sauté for 2 minutes until fragrant.
- Add rinsed jasmine rice to the pot and stir well to coat the rice with the oil and spices.
- Pour in coconut milk and water, then add salt and sugar. Stir to combine all ingredients.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.
- Simmer the rice for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
- Remove the pot from heat and let it sit, covered, for 5 minutes to allow the rice to steam.
- Fluff the rice with a fork, remove the bay leaf, and garnish with chopped green onions before serving.

- Rinse jasmine rice under cold water until the water runs clear.
