Kofta Chili

Kofta Chili combines spiced meatballs with a rich tomato-based chili, simmered with beans and spices for a hearty meal.

Instructions

  1. In a large bowl, combine ground beef, ground lamb, half of the chopped onions, half of the minced garlic, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon salt, and 0.5 teaspoon black pepper. Mix well and form into small meatballs.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove and set aside.
  3. In the same skillet, add the remaining olive oil and sauté the remaining onions and garlic until translucent.
  4. Add the remaining cumin, coriander, cayenne pepper, and tomato paste to the skillet. Stir and cook for 2 minutes.
  5. Pour in the crushed tomatoes and beef broth. Bring to a simmer.
  6. Add the browned meatballs back into the skillet along with the kidney beans. Stir gently to combine.
  7. Cover and simmer on low heat for 30 minutes, stirring occasionally.
  8. Garnish with chopped fresh cilantro before serving.

Prep

  • Thaw ground beef and lamb if frozen.
