Schezwan Fried Rice
Schezwan Fried Rice is a spicy stir-fried rice dish with vegetables and chicken, flavored with Schezwan sauce.

| Schezwan Sauce (store-bought or homemade) | 6 | Tbsp |
| Soy Sauce (light) | 3 | Tbsp |
| Vegetable Oil (for frying) | 4 | Tbsp |
| Salt (to taste) | 1 | Tsp |
| Black Pepper (freshly ground) | 0.5 | Tsp |
Instructions
- Heat 2 tablespoons of vegetable oil in a large wok over medium-high heat.
- Add minced garlic and ginger, stir-fry for 30 seconds until fragrant.
- Add chicken cubes, stir-fry until they are cooked through and slightly browned.
- Add chopped carrots, bell pepper, and green beans. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
- Push the vegetables and chicken to the side of the wok, add remaining 2 tablespoons of oil in the center.
- Add cooked rice to the wok, mix everything together.
- Pour in the Schezwan sauce and soy sauce, stir well to coat the rice evenly.
- Season with salt and black pepper, adjust to taste.
- Add chopped green onions, stir-fry for another minute.
- Serve hot, garnished with additional green onions if desired.
Prep
- Cook and cool the basmati rice at least 2 hours in advance.
