Schezwan Fried Rice

Schezwan Fried Rice is a spicy stir-fried rice dish with vegetables and chicken, flavored with Schezwan sauce.

Schezwan Sauce (store-bought or homemade)6Tbsp
Soy Sauce (light)3Tbsp
Vegetable Oil (for frying)4Tbsp
Salt (to taste)1Tsp
Black Pepper (freshly ground)0.5Tsp

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large wok over medium-high heat.
  2. Add minced garlic and ginger, stir-fry for 30 seconds until fragrant.
  3. Add chicken cubes, stir-fry until they are cooked through and slightly browned.
  4. Add chopped carrots, bell pepper, and green beans. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Push the vegetables and chicken to the side of the wok, add remaining 2 tablespoons of oil in the center.
  6. Add cooked rice to the wok, mix everything together.
  7. Pour in the Schezwan sauce and soy sauce, stir well to coat the rice evenly.
  8. Season with salt and black pepper, adjust to taste.
  9. Add chopped green onions, stir-fry for another minute.
  10. Serve hot, garnished with additional green onions if desired.

Prep

  • Cook and cool the basmati rice at least 2 hours in advance.
