Japchae

Japchae is a Korean stir-fried noodle dish made with sweet potato noodles, vegetables, and beef, seasoned with soy sauce and sesame oil.

Instructions

  1. Soak the sweet potato noodles in warm water for 30 minutes, then drain.
  2. In a bowl, marinate the beef with 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of sugar for 20 minutes.
  3. Blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water. Season with a pinch of salt and set aside.
  4. In a large pan, heat 1 tablespoon of sesame oil over medium heat. Add the marinated beef and stir-fry until cooked through. Remove and set aside.
  5. In the same pan, add the onion, carrot, bell pepper, and shiitake mushrooms. Stir-fry for 3-4 minutes until vegetables are tender.
  6. Add the garlic and green onions to the pan and stir-fry for another minute.
  7. Add the drained noodles to the pan along with the remaining soy sauce, sesame oil, and sugar. Toss everything together until well combined.
  8. Return the beef and spinach to the pan, and toss everything together. Season with black pepper.
  9. Garnish with toasted sesame seeds before serving.
