Japchae
Japchae is a Korean stir-fried noodle dish made with sweet potato noodles, vegetables, and beef, seasoned with soy sauce and sesame oil.

Instructions
- Soak the sweet potato noodles in warm water for 30 minutes, then drain.
- In a bowl, marinate the beef with 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of sugar for 20 minutes.
- Blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water. Season with a pinch of salt and set aside.
- In a large pan, heat 1 tablespoon of sesame oil over medium heat. Add the marinated beef and stir-fry until cooked through. Remove and set aside.
- In the same pan, add the onion, carrot, bell pepper, and shiitake mushrooms. Stir-fry for 3-4 minutes until vegetables are tender.
- Add the garlic and green onions to the pan and stir-fry for another minute.
- Add the drained noodles to the pan along with the remaining soy sauce, sesame oil, and sugar. Toss everything together until well combined.
- Return the beef and spinach to the pan, and toss everything together. Season with black pepper.
- Garnish with toasted sesame seeds before serving.
