Chickpea Stir-Fry

A quick stir-fry of chickpeas with vegetables and spices, perfect for a healthy meal.

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
  3. Add sliced onion, red bell pepper, zucchini, and carrot. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  4. Add drained chickpeas to the skillet and stir well to combine.
  5. Pour in soy sauce and sesame oil, stir to coat all ingredients evenly.
  6. Add red chili flakes if using, and continue to cook for another 2-3 minutes.
  7. Remove from heat, garnish with chopped green onion and toasted sesame seeds before serving.
