Chickpea Stir-Fry
A quick stir-fry of chickpeas with vegetables and spices, perfect for a healthy meal.

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add sliced onion, red bell pepper, zucchini, and carrot. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Add drained chickpeas to the skillet and stir well to combine.
- Pour in soy sauce and sesame oil, stir to coat all ingredients evenly.
- Add red chili flakes if using, and continue to cook for another 2-3 minutes.
- Remove from heat, garnish with chopped green onion and toasted sesame seeds before serving.
