Leafy greens stir fry

A quick stir fry of assorted leafy greens with garlic, ginger, and soy sauce for a nutritious meal.

Garlic (minced)4Clove
Ginger (peeled and grated)1Inch
Soy Sauce (low sodium preferred)4Tbsp
Sesame Oil (for stir frying)2Tbsp
Sesame Seeds (toasted)2Tbsp
Red Chili Flakes (optional, for heat)1Tsp
Green Onions (sliced)3Stalk

Instructions

  1. Heat sesame oil in a large wok over medium-high heat.
  2. Add minced garlic and grated ginger to the wok and stir-fry for 30 seconds until fragrant.
  3. Add the chopped kale and bok choy to the wok and stir-fry for 3-4 minutes until they start to wilt.
  4. Add the spinach and continue to stir-fry for another 2 minutes until all greens are wilted.
  5. Pour in the soy sauce and sprinkle red chili flakes, if using. Stir well to combine.
  6. Remove from heat and garnish with toasted sesame seeds and sliced green onions before serving.
