Leafy greens stir fry
A quick stir fry of assorted leafy greens with garlic, ginger, and soy sauce for a nutritious meal.

| Garlic (minced) | 4 | Clove |
| Ginger (peeled and grated) | 1 | Inch |
| Soy Sauce (low sodium preferred) | 4 | Tbsp |
| Sesame Oil (for stir frying) | 2 | Tbsp |
| Sesame Seeds (toasted) | 2 | Tbsp |
| Red Chili Flakes (optional, for heat) | 1 | Tsp |
| Green Onions (sliced) | 3 | Stalk |
Instructions
- Heat sesame oil in a large wok over medium-high heat.
- Add minced garlic and grated ginger to the wok and stir-fry for 30 seconds until fragrant.
- Add the chopped kale and bok choy to the wok and stir-fry for 3-4 minutes until they start to wilt.
- Add the spinach and continue to stir-fry for another 2 minutes until all greens are wilted.
- Pour in the soy sauce and sprinkle red chili flakes, if using. Stir well to combine.
- Remove from heat and garnish with toasted sesame seeds and sliced green onions before serving.
