Sweet Potatoes N' Onions
Roasted sweet potatoes and onions seasoned with herbs and spices, baked until tender and caramelized.

Instructions
- Preheat the oven to 200 degrees Celsius.
- In a large mixing bowl, combine sweet potatoes, red onions, olive oil, minced garlic, rosemary, thyme, salt, and black pepper.
- Toss the ingredients until the sweet potatoes and onions are evenly coated with oil and seasonings.
- Spread the mixture in a single layer on a baking sheet.
- Roast in the preheated oven for 35-40 minutes, stirring halfway through, until sweet potatoes are tender and edges are caramelized.
- Remove from the oven and let it cool slightly before serving.
