Tofu Scramble
Tofu scramble is a quick and easy dish made by crumbling tofu and cooking it with vegetables and spices.

| Nutritional Yeast (optional, for flavor) | 2 | Tbsp |

| Black Pepper (freshly ground) | 0.5 | Tsp |
| Cherry Tomatoes (halved) | 150 | Grams |
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Add diced bell pepper and cook until softened, about 3 minutes.
- Add crumbled tofu to the skillet and stir well to combine with vegetables.
- Sprinkle turmeric, cumin, salt, and black pepper over the tofu mixture and stir to coat evenly.
- Cook for about 5 minutes, stirring occasionally, until tofu is heated through and spices are well incorporated.
- Add chopped spinach and halved cherry tomatoes to the skillet and cook until spinach is wilted, about 2 minutes.
- If using, stir in nutritional yeast and mix well.
- Adjust seasoning with more salt and pepper if needed, then serve hot.
