Stuffed zucchini boats
Prepare zucchini boats filled with a savory mixture of ground beef, vegetables, and cheese, baked until tender.

Instructions
- Preheat the oven to 190 degrees Celsius.
- Scoop out the flesh from the zucchini halves, leaving a shell about 1 centimeter thick.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until translucent.
- Add ground beef to the skillet, cook until browned. Drain excess fat if necessary.
- Stir in bell pepper and cook for 3 minutes. Add tomato sauce, salt, and pepper. Simmer for 5 minutes.
- Mix in half of the parmesan cheese and basil into the beef mixture.
- Place zucchini halves in a baking dish. Fill each with the beef mixture.
- Top each zucchini boat with mozzarella cheese and the remaining parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until zucchini is tender and cheese is golden.
- Garnish with additional fresh basil before serving.
