Stuffed zucchini boats

Instructions

  1. Preheat the oven to 190 degrees Celsius.
  2. Scoop out the flesh from the zucchini halves, leaving a shell about 1 centimeter thick.
  3. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until translucent.
  4. Add ground beef to the skillet, cook until browned. Drain excess fat if necessary.
  5. Stir in bell pepper and cook for 3 minutes. Add tomato sauce, salt, and pepper. Simmer for 5 minutes.
  6. Mix in half of the parmesan cheese and basil into the beef mixture.
  7. Place zucchini halves in a baking dish. Fill each with the beef mixture.
  8. Top each zucchini boat with mozzarella cheese and the remaining parmesan cheese.
  9. Bake in the preheated oven for 25-30 minutes, or until zucchini is tender and cheese is golden.
  10. Garnish with additional fresh basil before serving.
