Sloppy Joe stuffed sweet potatoes
Sweet potatoes are baked and stuffed with a savory beef mixture for a hearty meal.

Instructions
- Preheat the oven to 200 degrees Celsius. Pierce each sweet potato several times with a fork.
- Place sweet potatoes on a baking sheet and bake for 45-60 minutes until tender.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add ground beef to the skillet, cook until browned, breaking it apart with a spoon.
- Stir in diced bell pepper, tomato sauce, tomato paste, Worcestershire sauce, brown sugar, salt, and black pepper. Simmer for 10-15 minutes.
- Once sweet potatoes are done, let them cool slightly, then slice open lengthwise and fluff the inside with a fork.
- Spoon the beef mixture into each sweet potato, top with shredded cheddar cheese.
- Return stuffed sweet potatoes to the oven for 5-10 minutes until cheese is melted.
