Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and minced garlic, sauté until onions are translucent.
  3. Add ground beef, cook until browned, breaking it apart with a spoon.
  4. Stir in chopped red and green bell peppers, cook for 5 minutes.
  5. Add chili powder, cumin, smoked paprika, oregano, salt, and black pepper, stir well.
  6. Mix in tomato paste, canned tomatoes, beef broth, kidney beans, and black beans.
  7. Bring to a boil, then reduce heat to low and simmer for 30 minutes, stirring occasionally.
  8. Adjust seasoning with more salt and pepper if needed before serving.
