Instructions
- In a large skillet, heat sesame oil over medium heat.
- Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add ground chicken to the skillet, cook until browned and cooked through, about 5-7 minutes.
- Stir in soy sauce, hoisin sauce, rice vinegar, and sriracha. Cook for another 2 minutes.
- Add chopped water chestnuts, sliced green onions, and grated carrot. Stir to combine and cook for 3 more minutes.
- Remove from heat and let the mixture cool slightly.
- Spoon the chicken mixture into the center of each lettuce leaf.
- Garnish with chopped peanuts before serving.
