Instructions

  1. In a large skillet, heat sesame oil over medium heat.
  2. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
  3. Add ground chicken to the skillet, cook until browned and cooked through, about 5-7 minutes.
  4. Stir in soy sauce, hoisin sauce, rice vinegar, and sriracha. Cook for another 2 minutes.
  5. Add chopped water chestnuts, sliced green onions, and grated carrot. Stir to combine and cook for 3 more minutes.
  6. Remove from heat and let the mixture cool slightly.
  7. Spoon the chicken mixture into the center of each lettuce leaf.
  8. Garnish with chopped peanuts before serving.
