Instructions
- Preheat the oven to 200 degrees Celsius.
- Toss the carrot sticks with olive oil, salt, and black pepper in a large bowl.
- Spread the carrots on a baking sheet and roast for 25-30 minutes until caramelized, turning halfway through.
- In a small saucepan, combine honey and red pepper flakes. Warm over low heat for 5 minutes, then set aside.
- In a mixing bowl, whip the ricotta cheese with lemon zest, lemon juice, and minced garlic until smooth and creamy.
- Spread the whipped ricotta on a serving platter.
- Arrange the caramelized carrots over the ricotta.
- Drizzle the hot honey over the carrots and ricotta.
- Garnish with fresh thyme leaves before serving.
