Instructions
- In a bowl, mix olive oil, lemon juice, honey, minced garlic, salt, and black pepper to create a marinade.
- Place chicken breasts in a resealable bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 2 hours.
- Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until fully cooked.
- Let the grilled chicken rest for 5 minutes, then slice it into strips.
- In a large salad bowl, combine mixed salad greens, blackberries, basil leaves, crumbled feta cheese, and toasted almonds.
- Add the sliced grilled chicken to the salad bowl.
- Drizzle the remaining marinade over the salad and toss gently to combine.
- Serve the salad immediately, ensuring each serving has an equal portion of chicken, berries, and greens.
