Beef & Noodles with Mashed Potatoes

Prepare beef and noodles with mashed potatoes using braised beef, egg noodles, and creamy mashed potatoes.

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
  2. In the same pot, add chopped onion and minced garlic. Sauté until onion is translucent.
  3. Sprinkle flour over the onion and garlic, stir well, and cook for 1 minute.
  4. Return beef to the pot. Pour in beef broth, bring to a boil, then reduce heat to low and simmer for 1.5 hours or until beef is tender.
  5. While beef is cooking, boil potatoes in a separate pot until tender. Drain and return to the pot.
  6. Add butter and whole milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Cook egg noodles according to package instructions. Drain and set aside.
  8. Once beef is tender, add cooked noodles to the beef mixture. Stir to combine and heat through.
  9. Serve beef and noodles over a bed of mashed potatoes. Garnish with chopped parsley.

Prep

  • Thaw beef chuck in the refrigerator overnight if frozen.
