Instructions

  1. Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter, brown sugar, and granulated sugar until creamy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots, chopped walnuts, and raisins.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 5 centimeters apart.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
