Chicken & Noodles with Mashed Potatoes

Prepare chicken and noodles with mashed potatoes using simmered chicken, egg noodles, and creamy mashed potatoes.

Instructions

  1. In a large pot, add chicken broth, chicken breasts, onion, garlic, carrots, and celery. Bring to a boil, then reduce heat and simmer for 20 minutes.
  2. Remove chicken breasts from the pot and shred them using two forks.
  3. Add egg noodles to the pot and cook according to package instructions until tender.
  4. Return shredded chicken to the pot, season with salt and pepper, and stir in chopped parsley.
  5. In a separate pot, boil potatoes until tender, about 15 minutes. Drain and return to the pot.
  6. Add butter and whole milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Serve the chicken and noodles alongside the mashed potatoes.
