Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a small bowl, mix minced garlic, chopped rosemary, Dijon mustard, olive oil, salt, black pepper, and lemon zest.
  3. Rub the mixture evenly over the rack of lamb, ensuring it is well coated.
  4. Place the lamb on a roasting pan and let it sit at room temperature for 30 minutes.
  5. Roast the lamb in the preheated oven for 25-30 minutes for medium-rare, or until desired doneness.
  6. Remove the lamb from the oven and let it rest for 10 minutes before slicing.
