Instructions
- Preheat the oven to 200 degrees Celsius.
- In a small bowl, mix minced garlic, chopped rosemary, Dijon mustard, olive oil, salt, black pepper, and lemon zest.
- Rub the mixture evenly over the rack of lamb, ensuring it is well coated.
- Place the lamb on a roasting pan and let it sit at room temperature for 30 minutes.
- Roast the lamb in the preheated oven for 25-30 minutes for medium-rare, or until desired doneness.
- Remove the lamb from the oven and let it rest for 10 minutes before slicing.
