Instructions

  1. In a large bowl, mix warm water and yeast. Let it sit for 5 minutes until foamy.
  2. Add flour, fine sea salt, and 30 milliliters of olive oil to the yeast mixture. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 2 hours until doubled in size.
  5. Preheat the oven to 220 degrees Celsius (428 degrees Fahrenheit).
  6. Punch down the dough and transfer it to a greased baking sheet. Stretch it to fit the sheet.
  7. Dimple the dough with your fingers, drizzle with remaining olive oil, and sprinkle with rosemary leaves and coarse sea salt.
  8. Bake in the preheated oven for 20 to 25 minutes until golden brown.
  9. Remove from oven and let cool slightly before slicing and serving.
