Chicken thighs w/mushrooms, onion and wine

Instructions

  1. Season the chicken thighs with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add butter and melt over medium heat. Add sliced onions and cook until translucent, about 5 minutes.
  4. Add minced garlic and sliced mushrooms to the onions. Sauté for another 5 minutes until mushrooms are tender.
  5. Pour in the white wine and let it simmer for 2 minutes, allowing the alcohol to evaporate.
  6. Add chicken broth and thyme to the skillet. Return the chicken thighs to the skillet, nestling them into the mushroom mixture.
  7. Cover the skillet and let it simmer on low heat for 20 minutes until the chicken is cooked through.
  8. Remove the thyme sprigs before serving. Adjust seasoning with salt and pepper if needed.
