Chicken thighs w/mushrooms, onion and wine
Sauté chicken thighs with mushrooms, onions, and wine for a savory dish.

Instructions
- Season the chicken thighs with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and sear for 5 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add butter and melt over medium heat. Add sliced onions and cook until translucent, about 5 minutes.
- Add minced garlic and sliced mushrooms to the onions. Sauté for another 5 minutes until mushrooms are tender.
- Pour in the white wine and let it simmer for 2 minutes, allowing the alcohol to evaporate.
- Add chicken broth and thyme to the skillet. Return the chicken thighs to the skillet, nestling them into the mushroom mixture.
- Cover the skillet and let it simmer on low heat for 20 minutes until the chicken is cooked through.
- Remove the thyme sprigs before serving. Adjust seasoning with salt and pepper if needed.
