Instructions
- Preheat the oven to 180 degrees Celsius.
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion, minced garlic, and chopped bell pepper to the skillet. Cook until vegetables are softened.
- Stir in diced tomatoes, corn kernels, black beans, chili powder, cumin, salt, and black pepper. Simmer for 10 minutes.
- Transfer the beef mixture to a baking dish and sprinkle with shredded cheddar cheese.
- In a bowl, mix cornmeal, all-purpose flour, baking powder, whole milk, egg, and melted butter to form a batter.
- Pour the batter evenly over the beef mixture in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the cornbread topping is golden brown.
- Let the tamale pie cool for a few minutes before serving.
