Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add chopped onion, minced garlic, and chopped bell pepper to the skillet. Cook until vegetables are softened.
  4. Stir in diced tomatoes, corn kernels, black beans, chili powder, cumin, salt, and black pepper. Simmer for 10 minutes.
  5. Transfer the beef mixture to a baking dish and sprinkle with shredded cheddar cheese.
  6. In a bowl, mix cornmeal, all-purpose flour, baking powder, whole milk, egg, and melted butter to form a batter.
  7. Pour the batter evenly over the beef mixture in the baking dish.
  8. Bake in the preheated oven for 25-30 minutes, or until the cornbread topping is golden brown.
  9. Let the tamale pie cool for a few minutes before serving.
