Spinach, Ricotta & Prosciutto Empanadas

Prepare lamb chops with a pistachio crust using fresh herbs and spices, then bake until tender and flavorful.

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a bowl, mix chopped pistachios, breadcrumbs, grated parmesan, minced garlic, chopped rosemary, and thyme.
  3. Add olive oil to the mixture and stir until well combined.
  4. Season lamb chops with salt and black pepper on both sides.
  5. Brush each lamb chop with whole grain mustard.
  6. Press the pistachio mixture onto the mustard-coated side of each lamb chop to form a crust.
  7. Place the lamb chops on a baking sheet lined with parchment paper, crust side up.
  8. Bake in the preheated oven for 15-20 minutes or until the crust is golden and the lamb is cooked to your liking.
  9. Remove from the oven and let rest for 5 minutes before serving.

Prep

  • Thaw lamb chops in the refrigerator overnight if frozen.
