Spinach, Ricotta & Prosciutto Empanadas
Prepare lamb chops with a pistachio crust using fresh herbs and spices, then bake until tender and flavorful.

Instructions
- Preheat the oven to 200 degrees Celsius.
- In a bowl, mix chopped pistachios, breadcrumbs, grated parmesan, minced garlic, chopped rosemary, and thyme.
- Add olive oil to the mixture and stir until well combined.
- Season lamb chops with salt and black pepper on both sides.
- Brush each lamb chop with whole grain mustard.
- Press the pistachio mixture onto the mustard-coated side of each lamb chop to form a crust.
- Place the lamb chops on a baking sheet lined with parchment paper, crust side up.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden and the lamb is cooked to your liking.
- Remove from the oven and let rest for 5 minutes before serving.
Prep
- Thaw lamb chops in the refrigerator overnight if frozen.
