Alfajores
Alfajores are delicate sandwich cookies filled with dulce de leche, made with cornstarch and flour for a tender texture.

Instructions
- In a bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine the sifted all-purpose flour, cornstarch, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into circles using a cookie cutter.
- Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely on a wire rack.
- Spread dulce de leche on the flat side of half the cookies and sandwich with the remaining cookies.
- Dust the alfajores with powdered sugar before serving.
Prep
- Refrigerate the dough for at least 1 hour before rolling.
