Alfajores

Alfajores are delicate sandwich cookies filled with dulce de leche, made with cornstarch and flour for a tender texture.

Instructions

  1. In a bowl, cream the softened butter and granulated sugar until light and fluffy.
  2. Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In another bowl, combine the sifted all-purpose flour, cornstarch, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  7. Roll out the dough on a floured surface to about 1/4 inch thickness. Cut into circles using a cookie cutter.
  8. Place the cookies on the prepared baking sheet and bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool completely on a wire rack.
  10. Spread dulce de leche on the flat side of half the cookies and sandwich with the remaining cookies.
  11. Dust the alfajores with powdered sugar before serving.

Prep

  • Refrigerate the dough for at least 1 hour before rolling.
