Cabbage carbonara combines sautéed cabbage with pancetta, eggs, and parmesan for a creamy pasta dish.

Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
- In a large skillet, heat olive oil over medium heat. Add pancetta and cook until crispy, about 5 minutes.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Add the sliced cabbage to the skillet and cook until softened, about 5-7 minutes.
- In a bowl, whisk together eggs, grated parmesan cheese, and black pepper.
- Add the cooked spaghetti to the skillet with cabbage and pancetta. Toss to combine.
- Remove the skillet from heat and quickly pour the egg mixture over the pasta, stirring constantly to create a creamy sauce. Add reserved pasta water as needed to reach desired consistency.
- Season with additional salt and pepper to taste. Serve immediately.
