Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat. Add pancetta and cook until crispy, about 5 minutes.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Add the sliced cabbage to the skillet and cook until softened, about 5-7 minutes.
  5. In a bowl, whisk together eggs, grated parmesan cheese, and black pepper.
  6. Add the cooked spaghetti to the skillet with cabbage and pancetta. Toss to combine.
  7. Remove the skillet from heat and quickly pour the egg mixture over the pasta, stirring constantly to create a creamy sauce. Add reserved pasta water as needed to reach desired consistency.
  8. Season with additional salt and pepper to taste. Serve immediately.
