Street corn chicken casserole

A baked casserole combining chicken, corn, and spices with a creamy cheese sauce, topped with crushed tortilla chips.

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large skillet, heat olive oil over medium heat. Add chicken cubes and cook until browned, about 5-7 minutes.
  3. Add chopped onion, red and green bell peppers, jalapeno, and minced garlic to the skillet. Cook until vegetables are softened, about 5 minutes.
  4. Stir in corn, cumin, chili powder, salt, and black pepper. Cook for another 2 minutes.
  5. Reduce heat to low and add cream cheese and whole milk. Stir until the cream cheese is melted and the mixture is creamy.
  6. Remove from heat and stir in 1 cup of shredded cheddar cheese until melted.
  7. Transfer the mixture to a baking dish and spread evenly.
  8. Top with remaining cheddar cheese and crushed tortilla chips.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  10. Remove from oven and let cool for 5 minutes before serving.

  • Thaw frozen corn if using frozen.
