Tex-Mex zucchini bake
A baked casserole combining zucchini, ground beef, and cheese with Tex-Mex spices, layered and cooked in the oven.

Instructions
- Preheat the oven to 180 degrees Celsius.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add ground beef to the skillet, cook until browned. Drain excess fat.
- Stir in chopped red bell pepper, canned black beans, canned corn, tomato sauce, chili powder, cumin, salt, and black pepper. Simmer for 5 minutes.
- In a baking dish, layer half of the sliced zucchini, followed by half of the beef mixture, and half of the shredded cheddar cheese.
- Repeat the layers with the remaining zucchini, beef mixture, and cheddar cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let it cool for 5 minutes before serving. Top with sour cream if desired.
