Tex-Mex zucchini bake

A baked casserole combining zucchini, ground beef, and cheese with Tex-Mex spices, layered and cooked in the oven.

Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
  3. Add ground beef to the skillet, cook until browned. Drain excess fat.
  4. Stir in chopped red bell pepper, canned black beans, canned corn, tomato sauce, chili powder, cumin, salt, and black pepper. Simmer for 5 minutes.
  5. In a baking dish, layer half of the sliced zucchini, followed by half of the beef mixture, and half of the shredded cheddar cheese.
  6. Repeat the layers with the remaining zucchini, beef mixture, and cheddar cheese.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for 5 minutes before serving. Top with sour cream if desired.
