Cajun white chicken chili

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, green bell pepper, and celery. Sauté until vegetables are soft.
  2. Add minced garlic and cubed chicken breast to the pot. Cook until the chicken is browned on all sides.
  3. Stir in Cajun seasoning and cook for another minute to release the flavors.
  4. Pour in chicken broth and bring to a simmer. Add white beans and corn. Cook for 15 minutes.
  5. Reduce heat to low and stir in whole milk and cream cheese. Stir until the cream cheese is fully melted and incorporated.
  6. Simmer for an additional 10 minutes, stirring occasionally, until the chili is thickened.
  7. Stir in lime juice and adjust seasoning with salt and pepper to taste.
  8. Serve hot, garnished with chopped cilantro.
