Cajun white chicken chili
A hearty Cajun white chicken chili made by simmering chicken, beans, and spices in a creamy broth.

Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, green bell pepper, and celery. Sauté until vegetables are soft.
- Add minced garlic and cubed chicken breast to the pot. Cook until the chicken is browned on all sides.
- Stir in Cajun seasoning and cook for another minute to release the flavors.
- Pour in chicken broth and bring to a simmer. Add white beans and corn. Cook for 15 minutes.
- Reduce heat to low and stir in whole milk and cream cheese. Stir until the cream cheese is fully melted and incorporated.
- Simmer for an additional 10 minutes, stirring occasionally, until the chili is thickened.
- Stir in lime juice and adjust seasoning with salt and pepper to taste.
- Serve hot, garnished with chopped cilantro.
