Grilled vegan BBQ skewers with marinated tofu, vegetables, and a tangy homemade sauce.

Instructions
- In a bowl, mix soy sauce, maple syrup, apple cider vinegar, smoked paprika, garlic powder, and black pepper to make the marinade.
- Add tofu cubes to the marinade, ensuring they are well coated. Marinate for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread marinated tofu, red bell pepper, zucchini, red onion, and mushrooms onto the soaked bamboo skewers.
- Brush the skewers with olive oil to prevent sticking.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until vegetables are tender and tofu is slightly charred.
- Serve the skewers hot with additional BBQ sauce if desired.
Prep
- Soak bamboo skewers in water for 30 minutes.
- Marinate tofu in the refrigerator for at least 1 hour.
