Bourbon Glazed Chicken — roasted red potatoes

Instructions
- Preheat the oven to 200 degrees Celsius.
- In a saucepan, combine bourbon, brown sugar, soy sauce, honey, minced garlic, and grated ginger. Bring to a simmer over medium heat and cook until slightly thickened, about 10 minutes.
- Place the chicken breasts in a baking dish and pour half of the bourbon glaze over them. Reserve the remaining glaze for later.
- In a large bowl, toss the quartered red potatoes with olive oil, 1 teaspoon of salt, and black pepper.
- Spread the potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden and tender.
- Place the chicken in the oven alongside the potatoes and bake for 20-25 minutes, or until the chicken is cooked through.
- Remove the chicken from the oven and brush with the remaining bourbon glaze.
- Melt the butter in a small saucepan and drizzle over the roasted potatoes. Sprinkle with the remaining salt.
- Garnish the chicken and potatoes with chopped parsley before serving.
