Atlantic Salmon with Peach-Onion-Mint Marmalade
Grilled Atlantic salmon served with a peach-onion-mint marmalade, combining fresh flavors with a hint of mint.

Instructions
- Preheat the grill to medium-high heat.
- Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and black pepper.
- Grill the salmon fillets for 4-5 minutes on each side or until cooked through.
- In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and sauté until translucent.
- Add the diced peaches to the saucepan and cook for 3-4 minutes until they start to soften.
- Stir in the honey, white wine vinegar, and lemon juice. Cook for another 5 minutes until the mixture thickens slightly.
- Remove the saucepan from heat and stir in the chopped mint leaves.
- Serve the grilled salmon topped with the peach-onion-mint marmalade.
