Instructions

  1. In a bowl, mix barbecue sauce, olive oil, minced garlic, lemon juice, salt, and black pepper to create a marinade.
  2. Place chicken breasts in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked.
  5. While the chicken is grilling, toss bell peppers, zucchini, and red onion with olive oil, salt, and pepper.
  6. Grill the vegetables for 5-6 minutes, turning occasionally, until they are tender and slightly charred.
  7. Serve the grilled chicken and vegetables on a platter, garnished with chopped fresh parsley.
