Instructions
- In a bowl, mix barbecue sauce, olive oil, minced garlic, lemon juice, salt, and black pepper to create a marinade.
- Place chicken breasts in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours.
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked.
- While the chicken is grilling, toss bell peppers, zucchini, and red onion with olive oil, salt, and pepper.
- Grill the vegetables for 5-6 minutes, turning occasionally, until they are tender and slightly charred.
- Serve the grilled chicken and vegetables on a platter, garnished with chopped fresh parsley.
