BBQ Tofu with Greens

Grilled tofu marinated in BBQ sauce served with sautéed mixed greens and garlic.

Tofu (firm, drained and pressed)500Grams
Bbq Sauce (store-bought or homemade)1Cup
Olive Oil (extra virgin)2Tbsp
Garlic (minced)3Clove
Kale (washed and chopped)1Bunch
Spinach (washed)1Bunch
Soy Sauce (low sodium)2Tbsp
Lemon Juice (freshly squeezed)2Tbsp
Salt (to taste)1Tsp
Black Pepper (freshly ground)0.5Tsp

Instructions

  1. Cut the pressed tofu into 1-inch cubes.
  2. In a bowl, mix tofu cubes with BBQ sauce and let it marinate for at least 30 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the marinated tofu cubes for about 3-4 minutes on each side until they are slightly charred.
  5. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  6. Add chopped kale and spinach to the skillet, and cook until wilted, about 5 minutes.
  7. Stir in soy sauce, lemon juice, salt, and black pepper into the greens and cook for another 2 minutes.
  8. Serve the grilled tofu over the sautéed greens.

Prep

  • Drain and press tofu for at least 30 minutes before marinating.
