BBQ Tofu with Greens
Grilled tofu marinated in BBQ sauce served with sautéed mixed greens and garlic.

| Tofu (firm, drained and pressed) | 500 | Grams |
| Bbq Sauce (store-bought or homemade) | 1 | Cup |
| Olive Oil (extra virgin) | 2 | Tbsp |
| Garlic (minced) | 3 | Clove |
| Kale (washed and chopped) | 1 | Bunch |
| Spinach (washed) | 1 | Bunch |
| Soy Sauce (low sodium) | 2 | Tbsp |
| Lemon Juice (freshly squeezed) | 2 | Tbsp |
| Salt (to taste) | 1 | Tsp |
| Black Pepper (freshly ground) | 0.5 | Tsp |
Instructions
- Cut the pressed tofu into 1-inch cubes.
- In a bowl, mix tofu cubes with BBQ sauce and let it marinate for at least 30 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Grill the marinated tofu cubes for about 3-4 minutes on each side until they are slightly charred.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Add chopped kale and spinach to the skillet, and cook until wilted, about 5 minutes.
- Stir in soy sauce, lemon juice, salt, and black pepper into the greens and cook for another 2 minutes.
- Serve the grilled tofu over the sautéed greens.
Prep
- Drain and press tofu for at least 30 minutes before marinating.
