Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, chopped carrot, chopped celery, and chopped bell pepper. Sauté until vegetables are soft, about 5 minutes.
  3. Add the smoked turkey pieces and cook for another 3 minutes.
  4. Stir in the dried black-eyed peas, bay leaves, and thyme.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the peas are tender.
  7. Season with salt and black pepper to taste. Remove bay leaves before serving.

Prep

  • Soak black-eyed peas in water for at least 8 hours or overnight.
