Black Eye peas
Simmered black-eyed peas with smoked turkey, vegetables, and spices for a hearty meal.

Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, minced garlic, chopped carrot, chopped celery, and chopped bell pepper. Sauté until vegetables are soft, about 5 minutes.
- Add the smoked turkey pieces and cook for another 3 minutes.
- Stir in the dried black-eyed peas, bay leaves, and thyme.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the peas are tender.
- Season with salt and black pepper to taste. Remove bay leaves before serving.
Prep
- Soak black-eyed peas in water for at least 8 hours or overnight.
