Blackened Fish
Blackened fish is prepared by coating fish fillets with a spice mix and searing them in a hot skillet.

Instructions
- Combine paprika, cayenne pepper, black pepper, garlic powder, onion powder, thyme, oregano, and salt in a small bowl to create the blackening spice mix.
- Pat the fish fillets dry with paper towels to remove excess moisture.
- Generously coat both sides of the fish fillets with the spice mix, pressing it into the fish.
- Heat a large cast iron skillet over high heat until it is very hot.
- Add butter to the skillet and allow it to melt and start to brown slightly.
- Place the fish fillets in the skillet and cook for 2-3 minutes on each side until the spices form a dark crust and the fish is cooked through.
- Remove the fish from the skillet and serve immediately with lemon wedges.
Prep
- Thaw fish fillets if frozen, at least 2 hours before cooking.
