Breakfast Burritos

Prepare breakfast burritos with scrambled eggs, sausage, cheese, and vegetables wrapped in flour tortillas.

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat and cook the breakfast sausage until browned. Remove and set aside.
  2. In the same skillet, add the remaining olive oil and sauté the diced onion and bell pepper until soft.
  3. In a bowl, whisk together the eggs, whole milk, salt, and black pepper.
  4. Pour the egg mixture into the skillet with the vegetables and cook, stirring gently, until the eggs are scrambled and cooked through.
  5. Add the cooked sausage back into the skillet and mix with the scrambled eggs and vegetables.
  6. Warm the flour tortillas in a dry skillet or microwave until pliable.
  7. Place a portion of the egg and sausage mixture onto each tortilla, sprinkle with shredded cheddar cheese, and roll up the burrito.
  8. Serve the breakfast burritos warm, optionally with salsa or hot sauce.
