Breakfast Skillets
A hearty breakfast skillet with potatoes, eggs, and sausage cooked together in a single pan.

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes to the skillet and cook for 10-15 minutes until golden brown and tender.
- Add chopped onion and diced bell peppers to the skillet, and sauté for 5 minutes until softened.
- Add sliced sausage to the skillet and cook for another 5 minutes until heated through.
- In a bowl, whisk together eggs, whole milk, salt, and black pepper.
- Pour the egg mixture over the ingredients in the skillet and cook until the eggs are set, stirring occasionally.
- Sprinkle shredded cheddar cheese over the top and cover the skillet until the cheese melts.
- Serve hot, garnished with additional black pepper if desired.
