Breakfast Skillets

A hearty breakfast skillet with potatoes, eggs, and sausage cooked together in a single pan.

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes to the skillet and cook for 10-15 minutes until golden brown and tender.
  3. Add chopped onion and diced bell peppers to the skillet, and sauté for 5 minutes until softened.
  4. Add sliced sausage to the skillet and cook for another 5 minutes until heated through.
  5. In a bowl, whisk together eggs, whole milk, salt, and black pepper.
  6. Pour the egg mixture over the ingredients in the skillet and cook until the eggs are set, stirring occasionally.
  7. Sprinkle shredded cheddar cheese over the top and cover the skillet until the cheese melts.
  8. Serve hot, garnished with additional black pepper if desired.
