Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and black pepper.
- Grill the chicken breasts for 6-7 minutes on each side until fully cooked. Let them rest before slicing.
- In a bowl, whisk together minced anchovy fillets, minced garlic, egg yolk, lemon juice, and dijon mustard.
- Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
- Season the dressing with salt and black pepper to taste.
- In a large salad bowl, combine the torn bib lettuce, sliced grilled chicken, croutons, and grated Parmesan cheese.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately, garnished with additional Parmesan cheese if desired.
