Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a bowl, mix goat cheese, chopped spinach, minced garlic, salt, and pepper.
  3. Cut a pocket into each pork chop and stuff with the goat cheese mixture.
  4. Secure the opening with toothpicks to prevent the filling from spilling out.
  5. Place the stuffed pork chops on a baking sheet and drizzle with 1 tablespoon of olive oil.
  6. In a large bowl, toss red bell pepper, zucchini, carrot, and onion with remaining olive oil, salt, pepper, and thyme.
  7. Spread the vegetables around the pork chops on the baking sheet.
  8. Bake in the preheated oven for 25-30 minutes or until the pork is cooked through and vegetables are tender.
  9. Remove from oven and let rest for 5 minutes before serving.
