Instructions
- Preheat the oven to 200 degrees Celsius.
- In a bowl, mix goat cheese, chopped spinach, minced garlic, salt, and pepper.
- Cut a pocket into each pork chop and stuff with the goat cheese mixture.
- Secure the opening with toothpicks to prevent the filling from spilling out.
- Place the stuffed pork chops on a baking sheet and drizzle with 1 tablespoon of olive oil.
- In a large bowl, toss red bell pepper, zucchini, carrot, and onion with remaining olive oil, salt, pepper, and thyme.
- Spread the vegetables around the pork chops on the baking sheet.
- Bake in the preheated oven for 25-30 minutes or until the pork is cooked through and vegetables are tender.
- Remove from oven and let rest for 5 minutes before serving.
