Instructions

  1. Preheat the oven to 180 degrees Celsius.
  2. Grease a muffin tin with olive oil.
  3. In a large bowl, whisk together the eggs and whole milk until well combined.
  4. Add the cooked and crumbled bacon, grated cheddar cheese, diced bell pepper, chopped spinach, and finely chopped onion to the egg mixture.
  5. Season the mixture with salt and freshly ground black pepper.
  6. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake in the preheated oven for 20-25 minutes, or until the omelette bites are set and lightly golden on top.
  8. Remove from the oven and let cool for a few minutes before removing the omelette bites from the tin.
