Instructions
- Preheat the oven to 180 degrees Celsius.
- Grease a muffin tin with olive oil.
- In a large bowl, whisk together the eggs and whole milk until well combined.
- Add the cooked and crumbled bacon, grated cheddar cheese, diced bell pepper, chopped spinach, and finely chopped onion to the egg mixture.
- Season the mixture with salt and freshly ground black pepper.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.
- Bake in the preheated oven for 20-25 minutes, or until the omelette bites are set and lightly golden on top.
- Remove from the oven and let cool for a few minutes before removing the omelette bites from the tin.
