Instructions

  1. In a large bowl, mix together the flour, baking powder, sugar, and salt.
  2. In another bowl, whisk together the milk, beaten eggs, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter, greasing the skillet as needed.
  7. Serve the pancakes warm, topped with sliced strawberries, blueberries, banana, and a drizzle of maple syrup.
