Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper.
  3. Rub the mixture all over the chicken, including under the skin and inside the cavity.
  4. Place the softened butter inside the cavity of the chicken.
  5. Tie the chicken legs together with kitchen twine and place the chicken breast-side up in a roasting pan.
  6. Roast the chicken in the preheated oven for about 1 hour and 20 minutes, or until the internal temperature reaches 75 degrees Celsius.
  7. Let the chicken rest for 10 minutes before carving and serving.

Prep

  • Thaw the chicken in the refrigerator overnight if frozen.
