Salmon with tarragon and mashed potatoes

Instructions

  1. Preheat the oven to 200 degrees Celsius.
  2. Place salmon fillets on a baking sheet lined with parchment paper.
  3. In a small bowl, mix chopped tarragon, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper.
  4. Spread the tarragon mixture evenly over the salmon fillets.
  5. Bake the salmon in the preheated oven for 15-20 minutes or until cooked through.
  6. While the salmon is baking, boil the potatoes in salted water until tender, about 15-20 minutes.
  7. Drain the potatoes and return them to the pot.
  8. Add warmed whole milk and butter to the potatoes and mash until smooth.
  9. Season the mashed potatoes with salt and pepper to taste.
  10. Serve the baked salmon with a side of mashed potatoes.
