Salmon with tarragon and mashed potatoes

Instructions
- Preheat the oven to 200 degrees Celsius.
- Place salmon fillets on a baking sheet lined with parchment paper.
- In a small bowl, mix chopped tarragon, lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper.
- Spread the tarragon mixture evenly over the salmon fillets.
- Bake the salmon in the preheated oven for 15-20 minutes or until cooked through.
- While the salmon is baking, boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add warmed whole milk and butter to the potatoes and mash until smooth.
- Season the mashed potatoes with salt and pepper to taste.
- Serve the baked salmon with a side of mashed potatoes.
