Sausage and Spinach Casserole
A baked casserole combining sausage, fresh spinach, and cheese with a creamy sauce, perfect for a hearty meal.

Instructions
- Preheat the oven to 180 degrees Celsius.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.
- Add the Italian sausage to the skillet, breaking it up with a spoon, and cook until browned.
- Stir in the chopped spinach and cook until wilted. Remove from heat and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in whole milk and heavy cream, stirring constantly until the sauce thickens.
- Add grated parmesan cheese, salt, black pepper, and nutmeg to the sauce. Stir until the cheese is melted and the sauce is smooth.
- Combine cooked pasta, sausage-spinach mixture, and cheese sauce in a large mixing bowl. Mix well.
- Transfer the mixture to a greased baking dish. Top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
- Let the casserole cool for a few minutes before serving.
