Vegan Oatmeal, Carrot, & Cranberry Cookies

Instructions

  1. Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper.
  2. In a small bowl, combine chia seeds with 6 tablespoons of water and let it sit for 10 minutes to form a gel-like consistency.
  3. In a large bowl, mix together rolled oats, grated carrots, dried cranberries, all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, whisk together melted coconut oil, maple syrup, vanilla extract, and the prepared chia seed mixture.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 5 centimeters apart.
  7. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
