Vegan Oatmeal, Carrot, & Cranberry Cookies

Instructions
- Preheat the oven to 180 degrees Celsius and line a baking sheet with parchment paper.
- In a small bowl, combine chia seeds with 6 tablespoons of water and let it sit for 10 minutes to form a gel-like consistency.
- In a large bowl, mix together rolled oats, grated carrots, dried cranberries, all-purpose flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together melted coconut oil, maple syrup, vanilla extract, and the prepared chia seed mixture.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 5 centimeters apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Prep
- Soak chia seeds in water for at least 10 minutes before starting the recipe.
