Vegetable Medley

A simple sauté of mixed vegetables including bell peppers, zucchini, and carrots, seasoned with herbs and spices.

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add sliced red bell peppers, zucchini, and carrots to the skillet. Stir well.
  4. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp.
  5. Add broccoli florets and continue to cook for another 3-4 minutes.
  6. Season with salt, black pepper, and dried oregano. Stir to combine.
  7. Remove from heat and drizzle with fresh lemon juice.
  8. Garnish with chopped fresh parsley before serving.
