Veggie Sliders

Prepare veggie sliders using black beans, quinoa, and spices, served on mini buns with toppings.

Cheddar Cheese (whole milk based)5Slice

Instructions

  1. In a large bowl, mash the black beans with a fork until mostly smooth.
  2. Add cooked quinoa, red bell pepper, onion, garlic, cumin, paprika, egg, breadcrumbs, salt, and black pepper to the mashed beans. Mix until well combined.
  3. Form the mixture into 10 small patties.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
  5. Place each patty on a mini burger bun. Top with a slice of cheddar cheese, lettuce, and tomato.
  6. Serve the veggie sliders warm.

Prep

  • Cook quinoa according to package instructions and let it cool.
