Veggie Sliders
Prepare veggie sliders using black beans, quinoa, and spices, served on mini buns with toppings.

| Olive Oil (for frying) | 2 | Tbsp |
| Mini Burger Buns (whole wheat) | 10 | Count |

Instructions
- In a large bowl, mash the black beans with a fork until mostly smooth.
- Add cooked quinoa, red bell pepper, onion, garlic, cumin, paprika, egg, breadcrumbs, salt, and black pepper to the mashed beans. Mix until well combined.
- Form the mixture into 10 small patties.
- Heat olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.
- Place each patty on a mini burger bun. Top with a slice of cheddar cheese, lettuce, and tomato.
- Serve the veggie sliders warm.
Prep
- Cook quinoa according to package instructions and let it cool.
