Instructions
- Char the onion and ginger under a broiler for 5 minutes until slightly blackened.
- In a large pot, add chicken, charred onion, ginger, star anise, cinnamon, cloves, and 3 liters of water.
- Bring to a boil, then reduce heat and simmer for 30 minutes, skimming any foam.
- Remove chicken and let cool. Shred the chicken into thin strips.
- Strain the broth, discarding solids, and return to the pot.
- Add fish sauce, sugar, and salt to the broth. Adjust seasoning to taste.
- Cook rice noodles according to package instructions, then drain.
- Divide noodles into bowls, top with shredded chicken, and pour hot broth over.
- Garnish with bean sprouts, cilantro, basil, green onion, jalapeno, and lime wedges.
Prep
- Soak rice noodles in warm water for 30 minutes before cooking.
