Instructions
- In a large pot, heat the red curry paste over medium heat for 1-2 minutes until fragrant.
- Add the coconut milk and chicken broth to the pot, stirring to combine with the curry paste.
- Stir in the fish sauce, lime juice, grated ginger, minced garlic, soy sauce, and sugar. Bring to a simmer.
- Meanwhile, place a shrimp in the center of each wonton wrapper. Fold and seal the edges with water to form wontons.
- Gently add the wontons to the simmering soup and cook for 5-7 minutes until the shrimp are cooked through and the wontons are tender.
- Add the sliced scallions and chopped cilantro to the soup. Stir gently to combine.
- Serve the soup hot, garnished with additional cilantro and sliced red chili if desired.
