Instructions

  1. In a large pot, heat the red curry paste over medium heat for 1-2 minutes until fragrant.
  2. Add the coconut milk and chicken broth to the pot, stirring to combine with the curry paste.
  3. Stir in the fish sauce, lime juice, grated ginger, minced garlic, soy sauce, and sugar. Bring to a simmer.
  4. Meanwhile, place a shrimp in the center of each wonton wrapper. Fold and seal the edges with water to form wontons.
  5. Gently add the wontons to the simmering soup and cook for 5-7 minutes until the shrimp are cooked through and the wontons are tender.
  6. Add the sliced scallions and chopped cilantro to the soup. Stir gently to combine.
  7. Serve the soup hot, garnished with additional cilantro and sliced red chili if desired.
