Soy Sauce chicken thigh over rice

Soy sauce chicken thighs are simmered in a savory sauce and served over steamed rice.

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Cook the rice according to package instructions and keep warm.
  3. In a large pot, combine light soy sauce, dark soy sauce, brown sugar, minced garlic, sliced ginger, star anise, and water.
  4. Bring the mixture to a boil over medium heat, stirring to dissolve the sugar.
  5. Add the chicken thighs to the pot, ensuring they are submerged in the sauce.
  6. Reduce the heat to low and simmer for 25-30 minutes, or until the chicken is cooked through.
  7. Remove the chicken from the pot and let it rest for a few minutes before slicing.
  8. Drizzle sesame oil over the chicken and garnish with chopped green onions.
  9. Serve the sliced chicken over the cooked jasmine rice, spooning some of the sauce over the top.

  • Thaw chicken thighs in the refrigerator overnight if frozen.
