Soy sauce chicken thighs are simmered in a savory sauce and served over steamed rice.

Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Cook the rice according to package instructions and keep warm.
- In a large pot, combine light soy sauce, dark soy sauce, brown sugar, minced garlic, sliced ginger, star anise, and water.
- Bring the mixture to a boil over medium heat, stirring to dissolve the sugar.
- Add the chicken thighs to the pot, ensuring they are submerged in the sauce.
- Reduce the heat to low and simmer for 25-30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and let it rest for a few minutes before slicing.
- Drizzle sesame oil over the chicken and garnish with chopped green onions.
- Serve the sliced chicken over the cooked jasmine rice, spooning some of the sauce over the top.
